Ingredients

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

½ teaspoon salt

1 cup pure pumpkin puree

1 cup granulated sugar

½ cup packed brown sugar

½ cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

4 ounces cream cheese, softened to room temperature

¼ cup powdered sugar

1 tablespoon milk

Instructions

Begin by preheating your oven to 350°F (175°C). Prepare a standard muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray.

In a medium mixing bowl, thoroughly whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. This ensures an even distribution of the dry ingredients.

In a separate large mixing bowl, add the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix these ingredients well using a whisk or electric mixer until the mixture is smooth and creamy, forming a cohesive batter.

Gradually incorporate the dry ingredient mixture into the wet ingredients. Stir gently just until combined; be careful not to over-mix, as this could lead to dense muffins. A few lumps are perfectly fine.

In a small bowl, blend the softened cream cheese, powdered sugar, and milk together until the mixture is completely smooth and creamy. This will be your delightful cream cheese filling.

Using a spoon or a scoop, fill each muffin cup halfway with the pumpkin batter. Then, add a generous dollop of the cream cheese mixture in the center of each muffin. Finally, top with more pumpkin batter until the cups are filled to about ¾ full, ensuring the cream cheese filling remains slightly concealed.

Place the muffin tin in the preheated oven and bake for 18 to 20 minutes. To check for doneness, insert a toothpick into the center of a muffin; it should come out clean or with a few crumbs attached, but not wet batter.

Once baked, allow the muffins to cool in the tin for 5 minutes. Carefully remove them from the tin and transfer the muffins to a wire rack to cool fully.

Prep Time: 15 minutes | Total Time: 35 minutes | Servings: 12 muffins

                    - Presentation Tips: For an elegant touch, lightly dust the cooled muffins with a sprinkle of powdered sugar and a pinch of cinnamon. Serving them warm enhances their flavor and aroma, making them a delightful treat!
